I agree that modern day diet is far from optimal but this has nothing to do with carbohydrates, starches or fats as such but on modern synthetic pseudo-foot that we are actually not made to eat and an ultra-sedentary lifestyle. Basically, this means that you largely do without processed and unhealthy foods. A vegitarian diet with grains is healthy than the paleo diet.
